Mango Bean Salad

Simple to make and tastes great

Ingredients

1 ripe Mango
1 can (250g) red beans. You can use fresh ones to if you like, I usually do, but it works just as well with canned beans
2 spring onions
1 chilli
juice of 1 lemon
4 stalks of mint
1 clove of garlic
2 tbs vinegar
salt and pepper
1 tbs olive oil (optional)

Basically you have to cut the Mango, spring onions, garlic and Mint stalks into pieces and mix with the other ingredients and you’re done
