One of my favourites. Tastes delicious and takes less than 5 min to prepare. With the right ingredients it can also be a great Weight Watchers dessert. My dish had a total of 5 ww points, I made 2 servings of it, so that’s 2,5 points for each.
What you need:
1 c plain junket/ curd (alternatively yoghurt)
1 c pudding vanilla
berries of choice
If you use yoghurt, be sure not to use greek or baltic yoghurt.
Simply mix the first 2 ingredients together in a small bowl. It doesn’t matter if you buy pudding or make it yourself. If you use fresh berries you will most likely not need any additional sugar but if you take deep frozen ones, you may want to add some. Serve with berries. You can either just place the berries on top/bottom or if you have an appropriate container place in between two layers of the mixture.
Other versions are also possible i.e strawberry flavoured pudding with a mango – passionfruit mix or chocolate flavoured pudding with cherries, have both always been very popular
