Coconut – Couscous with Mango

Originally this was intended to be a dessert, but as it is so filling, it may be better suited as a main dish. I ate some of it again for breakfast the next morning and that was great too.

What you need:

2 oz Couscous
2 c soy milk (or milk of choice)
2 tbs coconut milk
1 mango
1 lemon (to decorate)

Boil the Couscous in the milk and until it as absorbed all liquid. If it’s not soft enough then you have to add some more milk. 2 min before it’s done add the coconut milk and stir.
Cut the mango into squares and add to the Couscous.
