Onion baguettes with tomato – rosemary butter

The baguettes are great, but I particularly love the tomato butter, because it’s so simple to make and taste delicious. Works great as side dish or as lunch just by itself

This will give you 3 baguettes

for baguettes
2 lb flour
2 tbs yeast
1 tbs sugar
1 tbs salt
1 tbs olive oil
3 white onions
herbs (kinda optional, but I like to add some oregano)

for butter:
2 oz (soft) butter
2 tbs tomato paste
1 tbs dried rosemary

Mix, sugar,salt and yeast with 3 cups of warm water in a large bowl. Place a kitchen towel on top of the bowl and let the mixture rest for 20 min.
In the meantime heat the remaining oil in a pan and fry onions in it until they have a brownish color.

Preheat oven to 125 °F. When the 20 min are over add the flour to the liquid and knead until it becomes a bouncy dough. Soak the kitchen towel in warm water and place it on top of the bowl again. Shut down the oven and place bowl inside of it. Let it rest for 90 – 120 min. By the end of that time it should have roughly twice its original volume.

When the dough is ready preheat oven to 375 °F. Mix onions and herbs carefully with the mixture and form 3 baguettes out of it. Sprinkle some water on it and bake for about 25 min.

For the butter simply mix all ingredients and serve in a small bowl.
