I love this one. It’s delicious and you can store it for 2 – 3 days. Great for lazy afternoons and evenings, with some wine. It’s not really a cake, I guess, but I categorized it as one for a lack of a better term.
What you need:
1/2 lb almonds
1 lb spelt flour
2 tbs baking soda
1 oz butter
4 oz Honey
1 tbs cream
I think you’re supposed to peel the almonds, so if you can, get peeled almonds, if not never mind. I didn’t use peeled ones and it turned out just fine.
Preheat oven to 350 °F. Heat the almonds in a pan for 4 – 5 min. Mix them with the other first 5 ingredients in a large bowl and knead until it becomes a thick mixture.Form roughly 5 cm thick rolls.
This part is optional, because it’s for a better appearance only. Stir egg and cream and spread on the dough rolls.
Bake for 20 – 25 min.
Let it cool down and cut it into slices. Don’t do it like me and try to cut while it’s still warm, because you just can’t wait
