I used a traditional Risotto recipe (just without butter) for this one and added green peppers, tomatoes and thyme but you can really use whatever kind of vegetable and spice you like, just have fun with it

Basic Risotto Recipe:
4 cups vegetable stock
2 scallions
2 garlic cloves
2 tbs olive oil
1/2 lb risotto or paella rice i.e Arborio Rice (uncooked)
salt and pepper to taste

Vegetables and spices:
1 green pepper
5 peeled tomatoes
fresh thyme
1 teaspoon dries oregano

Risotto rice tends to be slightly more expensive than ordinary rice, but it’s worth spending the extra pennies on. It works of all kinds of rice but risotto rice just works best for risottos.

Heat olive oil in a large pot over medium heat. Stir in onion and garlic, and cook for 2 min. Add 1 cup of vegetable stock along with the rice, reduce heat and simmer until most of the water is gone. Gradually ladle in the remaining vegetable stock, stirring continuously
In the meantime, slice the vegetables and thyme.

When you stir in the last cup of stock, also stir in the vegetables and spices and simmer until the water has vanished
