I’m not quite sure of weight watchers policy with sweet potatoes, but apart from the potatoes, the dish barley contains any other points. Serve with vegetables of choice and maybe some meat or tofu and you get a great low points dinner
What you need:
1 big sweet potato (mine was almost 1 lb)
2 tbs honey
1 tbs mustard
1 tbs nutmeg
First you should peel the potato. I did peel only one half of mine, because my vegetable peeler broke and I’m horrible in doing it with a knife. So if, for some reason, you can’t or don’t want to peel it, don’t worry too much about it. It doesn’t make any difference for the taste, but it’s just kinda annoying to keep finding hard potato peel in your dinner.
Basically it’s prepared like ordinary mashed potatoes. Peel the potato, cut into smaller slices and boil until they become soft. Strain off water and mash until thy become slight and fluffy
Lastly add the honey, mustard and nutmeg and stir.
