Beetroot Risotto

Just another version of the basic risotto recipe. Has a nice color and tastes a bit sweeter.

Basic Risotto Recipe:
4 cups vegetable stock
2 scallions
2 garlic cloves
2 tbs olive oil
1/2 lb risotto or paella rice i.e Arborio Rice (uncooked)
sugar to taste

1/2 c beetroot (canned)
1 apple
3 tbs beetroot juice
2 tbs vodka (optional)

Heat olive oil in a large pot over medium heat. Stir in onion and garlic, and cook for 2 min. Add 1 cup of vegetable stock along with the rice, reduce heat and simmer until most of the water is gone. Gradually ladle in the remaining vegetable stock, stirring continuously

In the meantime chop beetroot , peel and square the apple. When you stir in the last cup of stock, also stir in the vegetables and spices and simmer until the water has vanished. Let it cool down for 1 -2 minutes and pour vodka on top. Stir only slightly
