Great low calorie dish and really cheap too
What you need:
1 cup of lentils (dry)
1 tbsp oregano
salt and pepper to taste
1 tbsp soya powder (optional)
vegan cheese (optional)
The cheese and soya powder will increase stability of the mixture but are necessary. If you’re not vegan you can also use egg whites and ordinary cheese
For the Zero point version you can’t cheese of course. I couldn’t find any information on the soya powder but I’d guess it contains some additional points too. Without the powder it will be a bit harder form the balls but it doesn’t change anything about the taste
Preheat oven to 375 °F. Let lentils soak in water overnight or for at least 6 hours. Boil in vegetable stock until they are soft. In the meantime , shred zucchini and chop onion. Place into a large bowl.
When lentils are soft, mash them and mix with zucchini and onion. Form little balls out of the mixture and bake for 25 – 30 min.
