Ice Cream Caipirinha


This is such a great and easy to make summer drink. I’m not sure if this is a traditional brazilian recipe but at least my friend Lisa who spend a year abroad in Brazil, back in grade 11, said her host parents often did this
What you need:
2 scopes of Ice Cream (preferably lemon flavoured, or better even lemon sorbet)
1/2 cup crushed Ice
1 lemon
1/2 cup cachaca or 1/4 cup white Rum with 1/4 cup dark Rum

You will usually not need sugar, the ice cream or sorbet makes it sweet enough, but you can additional sugar if you want

Cut lemon into 8 wedges. Place crushed iced, lemon wedges and cachaca into a glass and place another glass upside down over it and shake. You can also just stir with a spoon, but it just doesn’t look as cool
Drop the Ice cream or sorbet scopes into the glass. Don’t stir. The ice cream will melt rather fast so serve quickly

If you want a non alcoholic version you can do several things. One would be mixing 1/4 cup of soda with 1/4 cup of sprite or ginger ale. You don’t have to mix with soda, but I found the drink becomes a bit too sweet if you don’t.
You can also mix passion fruit juice with grape or pineapple juice. Will be quite different from the original, but still cool
