Aubergine – Tomato Pasta

I had this for diner last night and I thought it was great. If you want to safe weight watchers points leave out cheese and substitute dried tomatoes with more cherry tomatoes.


What you need:

1/4 lb dried pasta
1 aubergine
10 cherry tomatoes
6 dried tomatoes (optional)
2 garlic cloves
1 big onion
4 tbsp olive oil
3 oz Feta Cheese (optional)
1 tbsp oregano
3 tbsp tomato paste
salt and pepper to taste

I know it looks like a long list, but there is really nothing extraordinary on it, you will have most of it at home anyways

Prepare pasta according to instructions on package

Chop garlic, onions, aubergine and dried tomatoes. Half cherry tomatoes. Sauté onions, cherry tomatoes and garlic cloves for 2 -3 min. Add and 1/2 cup water along with dried tomatoes and aubergine (if you’re leaving out dried tomatoes, use a 1/4 cup).
Bring to Boil and add tomato paste and oregano. Reduce heat and let simmer until almost all of the water is gone. Lastly spoon pasta on top of the vegetables and stir well.

Pour Feta cheese on top before serving if you like. Server immediately, if you store for longer than an hour it becomes kinda weird.

Makes 4 -5 servings
