Nordic Berry Muffins

Those are definitely a bit more “edgy” than the average muffin, so give it a try. They are less sweet but the cloves give them a very unique taste and I love it. On top of that they are also vegan and more healthy than the average muffin.
This probably isn’t a Scandinavian recipe, but I thought it tastes kinda nordic, so I put it into that category

What you need:
2 c flour
1 c sugar
2 tbsp maple syrup
1/4 soy milk
1 teaspoon baking soda
1 tbsp lemon juice
1/3 c water
1 teaspoon grounded cloves
1 c nordic berries (Blueberries, Blackberries, Cranberries …)

Of course you can take ordinary milk instead of soy milk, but obviously it won’t be very vegan then. As for the cloves, less is more here. You may want to take a bit less than a teaspoon first, try, and then take more if you want to
The Muffins don’t look awesome, at least mine didn’t, although they kinda got fancy color, but they taste delicious, so don’t let that put you off

Preheat oven to 375. Place first 8 ingredients into a large bowl and mix until smooth. Take some more water or milk if needed. Pour berries on top and stir carefully.
Spoon mixture into muffin trays and bake for 25 – 30 min.

I added some canned cranberries on top to make it look more appealing and more like cupcakes, instead of muffins.
