Scrambled Tofu – Cheddar & Red Pepper

I usually make scrambled tofu spontaneously with whatever I have around but I liked this so much, that I want to do it again

6 oz Tofu
2 tbsp garlic oil
1 teaspoon onion powder
1/2 red pepper
2 tbsp chives (chopped)
3 tbsp tomato paste
3 oz white cheddar

Mash tofu with a fork. Slice pepper and heat oil in a pan. Place tofu and cheddar into the pan and stir well. Add cheddar and stir well again. Lastly add onion powder, chives and tomato paste and let simmer until the cheddar melted. Takes about 2 min
