Bean Taco Filling

I tried something different here and it worked out quite well. The filling itself also doesn’t have any weight watchers points, which makes it a great low-fat alternative to meat

Makes about 20 – 25 tacos
ingredients:
1 c red beans (dry)
1 c white beans (dry)
1/2 red lentils (dry)
1 green and 1 one yellow pepper
4 tbsp tomato paste
5 green pepperoni peppers
3 red pepperoni peppers
2 onions
3 garlic cloves
taco seasoning
5 c vegetable stock

Let Beans soak in water overnight. Place them into a large saucepan and cover with vegetable stock. Bring to boil and let simmer for 20 min. Add red lentils and let simmer for another 10 min. The Beans should be almost soft by then if not wait some more minutes. If needed add more water from time to time
Chop pepperoni peppers, garlic, onions and  peppers. Place into the sauce pan along with tomato paste and stir. Let simmer until most of the water is gone. Taste with taco seasoning and salt and mash.

As you can see from the picture I served it with cheese (which obviously ruins the zero point effect) and cucumber salad. Was a great success
