Carrot – Ginger Noodles with Pea Pesto

I just got back from volunteering in Africa with a lot of great recipes. This one is not very African though, I just made it because I was craving something healthy. Super cheap and super healthy dish

2 1/2 cup frozen peas
3/4 lb noodles
1 liter vegetable stock
5 big carrots
1 oz fresh ginger
6 garlic coves
1 tbsp chilli oil (or olive oil and chilli flakes)

Let peas warm up. Best to do this over night, but a few hours should be enough. Peel carrots and ginger. Chop carrots, ginger and 4 garlic cloves. Place in big saucepan along with vegetable stock. Let simmer for 10 min before adding noodles. You may have to add some more water, but try to take less water than usual, so that there is barely any water left when the noodles are done. The less water you need to drain off in the end, the more taste and vitamins stay in your dish

In the meantime, place peas in a food processor and add chilli oil. Chop garlic cloves and add to the mixture. Process until smooth and taste salt and pepper
