Carrot Potato Soup

This is a classic, but it’s so good and cheap. More importantly it’s simple. Every idiot can do this and it doesn’t take much time while still tasting somehow “classy”

3 cups vegetable broth
3 potatoes
5 carrots
1 onion
2 garlic cloves
1 teaspoon olive oil
salt and pepper to taste

chopped parsley (optional)
creme faiche (optional)

Chop onion and garlic. Heat olive oil in a big saucepan and saut̩ onion and garlic in it for 3 Р4 min.

Peel and chop potatoes and carrots. Pour vegetable broth into the saucepan and bring to boil. Add potatoes and carrots. Let simmer until soft, takes about 20 min. When soft process until smooth. Taste with salt and pepper.

I guess you don’t have to process it, but it won’t look as pretty if you don’t

You can serve with parsley or creme fraiche, or both.
