If you don’t have a lot of time and still want to make a nice dessert, this is it. If you have some more time you can get fancier with this recipe also
2 cups of vanilla pudding (if homemade take a bit less milk than usual)
2 – 3 tbsp of whiskey
1 1/2 cup sugar
1 tsp vinegar
1/2 cup light corn syrup
1/4 cup water
1/2 cup butter
1/2 tsp vanilla
3 tbsp whiskey
The pudding is super simple and you can eat it without the butterscotch. If you don’t make the vanilla pudding yourself it’s a super quick and cool dessert. Simply mix pudding and whisky. The amount of whiskey you take varies with your taste. You can stir in some whipped cream if you want.
The butterscotch is pretty much made like ordinary caramel. Heat sugar, vinegar, corn syrup and water in a saucepan. When it starts to boil wait for 4 – 5 min and then stir in the butter. Let simmer for roughly 15 min. Shorter or longer depending on how hard you want it to be.
Remove from heat and add vanilla as well as whiskey. Be careful with the whiskey.
Let cool down 10 – 15 min and then carefully mix with the pudding
