This is great. Nothing special but a quick an easy weeknight dinner. It’s also rather cheap. Serve with baked rosemary potatoes and you get a great dinner without much effort.
For 1 portion:
chicken (however much you think is appropriate, usually around 3 oz)
2 big carrots
1 cup water (you may need more than that)
1 teaspoon chopped basil
1 tbsp Worcestershire (or soy sauce if you prefer)
roughly 1 teaspoon grounded garlic
olive oil for stir frying.
You can do this in a saucepan or pan, but a pan with cover would be ideal.
Wash and chop carrots.Heat olive oil in a pan. Stir Fry chicken for 1-2 min on each side. Add water, basil and some of the garlic and let simmer for roughly 5 min. Check on it every once in a while to see if there is still enough water. Keep in mind that most of the water is supposed to be gone by the time the chicken is done. After 5 min add carrots and let simmer for another 10 – 15 min. Lastly add the rest of the garlic powder along with the Worcestershire and let simmer until most of the water is gone.
After 15 – 20 min total the chicken should be soft and there should be a kind of sauce in the pan. Simply pour on a plate and serve.
If you want to have more veggies, peas go great with it. Simply add some frozen peas to the carrots, it’s sill cheap, healthy and gives the dish a nice color. I used chicken but this works with every kind of meat, although the cooking time may be longer
