Zucchini fritters with 2 min Tzadziki

You can do the whole meal in roughly 6 min and serve as main dish or side dish, whatever you prefer.
There are very sophisticated versions of tzadziki out there, this one is not. It’s a very simple version of it but still tastes better and is healthier than the bought ones.

Tzadziki is a simple sauce out of plain yoghurt, cucumbers and garlic. It’s often served with gyros or pita (or other bread). My parents served it at BBQs and with fries, both works great.

For fritters:
1 zucchini
2 eggs
2 tbsp grated cheese
salt and pepper to taste
olive oil to stir fry

For Tzadziki:
1/2 cucumber
1/2 c plain yoghurt (made out of goat or sheep milk if you can get it at a reasonable price)
1/2 teaspoon garlic powder
salt and pepper

zucchini Fritters:
Heat some olive oil in a pan.Wash and grate the zuchini. Place granted zucchini in a big bowl, add eggs, cheese, salt, pepper and stir well. When olive oil is hot place some of the zucchini – egg mixture into the pan and let fry for roughly 2 min on each side.

While the fritters are frying you can prepare the Tzadziki. Simply place the yoghurt in a bowl grate the cucumber on top of it and stir. Add garlic and stir with salt and pepper – Done
