Honey Roasted Pumpkin Seeds

Halloween is coming up and all of us are probably going to interact with pumpkins one way or the other. When you prepare food that includes pumpkin don’t waste the seeds. They’re so easy to process and make a great snack

What you need:
1/2 tablespoon honey
pumpkin seeds from 1 pumpkin
1/2 teaspoon cinnamon
1/2 teaspoon lemon juice (optional)

Instructions:
Heat the honey in a pan along with 1 tablespoon of water. If you use lemon juice add that too. I find that without the lemon juice the honey can turn out to be fairly hard in the end. It may be that you want exactly that but if you prefer the honey around the pumpkin seeds to be more soft, add the lemon juice.

When honey starts boiling add the pumpkin seeds and cinnamon. Let simmer for about 7 – 10 min until the seeds have brownish color. Stir occasionally.

You can also do this in the oven. Simply mix all ingredients together and bake for roughly 40 min
