Winter – Berry Muffins

Winter Berry Muffins

Those are to die for. And they aren’t even that unhealthy, with close to no fat and fairly little added sugar. And they take less than 10 min to prepare. Now that they are selling all those huge christmas chocolate boxes I find this to be a better alternative if you’re craving something sweet. If you want to make it a bit sweeter you can add some chocolate drops and make sugary icing.

For 8 big Muffins

  • 1 1/2 cups all-purpose flour
  • 3/4 cup stevia or other sweetener
  • 2 teaspoon baking powder
  • 1 egg
  • 1/3 cup apple sauce
  • 1/4 cup skim milk
  • 1/2 cup frozen berries
  • 1 tbsp cinnamon
  • 1/2 tbsp cloves

Preheat oven to 360 °F. Mix all ingredients in a big bowl and stir until smooth. Spoon the mixture into muffin tins and bake for 25 – 30min.

If you want, pour cinnamon on top before serving or make icing. If you don’t have time to make icing but still want to but something on top, try Philadelphia Cadbury or Philadelphia milka (it’s the same thing just a different name depending on where you live). It already got the perfect consistency looks cool and is much healthier than other icing you can get at the grocery store.
