Fennel Parsnips in coconut milk with quinoa

I’ve never eaten Parsnips before, and I’m sure this is not how you traditionally prepare them, but I like it. They are so cheap here you can almost not afford not to use them. I got a whole lb for only 0.30€.

For 3 servings as side dish:

  • 5-6 parsnips
  • 1/4 fennel or 1 tbsp of dried fennel
  • 1 celery stalk
  • 1/2 cup coconut milk
  • 2 tbsp quinoa

Instructions:

Dice Parsnips, fennel and celery (peel if you want to) and boil in hot water until soft. Takes roughly 10 min. Drain off water and add coconut milk and quinoa let simmer for another 10 min until quinoa is soft too.
