Winter – Berry Muffins
Those are to die for. And they aren’t even that unhealthy, with close to no fat and fairly little added sugar. And they take less than 10 min to prepare. Now that they are selling all those huge christmas chocolate boxes I find this to be a better alternative if you’re craving something sweet. If you want to make it a bit sweeter you can add some chocolate drops and make sugary icing.
Mixed Berry Pie
This is so amazing. I used stevia instead of sugar to safe some calories, it’s still pretty unhealthy but not too bad. And it’s pie you don’t eat it everyday, so enjoy!

Doesn’t even take the full 5 min, unless you sit there and stare at the microwave
Nordic Berry Muffins
Those are definitely a bit more “edgy” than the average muffin, so give it a try. They are less sweet but the cloves give them a very unique taste and I love it. On top of that they are also vegan and more healthy than the average muffin.
This probably isn’t a Scandinavian recipe, but I thought it tastes kinda nordic, so I put it into that category
Breakfast ideas
People often say that breakfast is the most important meal of the day. You will be able concentrate or work better during the day, if eat a healthy breakfast. As the title suggest this is more of a set of ideas than actual recipes.
Mixed Berry Smoothie
Smoothies are good for really everything. Breakfast, Lunch, Dessert or just in between they’re always great. This recipe is nothing special just a basic berry smoothie, as I always do them.
It’s quite heavy for a smoothie so definitely more suitable as full breakfast or lunch.
For Weight Watchers, my Smoothies had 3 points (1 for yoghurt, 1 for milk and 1 for beetroot juice) and I made 2 servings out of it. If you want to add oatmeal and raisins you will be roughly at 6 points
Summer Pudding
This was the first time I ever made any kind of pudding. I think it turned out quite well, but was a bit below average when it comes the appearance. It tastes amazing though, so give it a try.
Austrian Topfcreme
One of my favourites. Tastes delicious and takes less than 5 min to prepare. With the right ingredients it can also be a great Weight Watchers dessert. My dish had a total of 5 ww points, I made 2 servings of it, so that’s 2,5 points for each.
