Fennel Parsnips in coconut milk with quinoa

I’ve never eaten Parsnips before, and I’m sure this is not how you traditionally prepare them, but I like it. They are so cheap here you can almost not afford not to use them. I got a whole lb for only 0.30€.

Winter – Berry Muffins

Those are to die for. And they aren’t even that unhealthy, with close to no fat and fairly little added sugar. And they take less than 10 min to prepare. Now that they are selling all those huge christmas chocolate boxes I find this to be a better alternative if you’re craving something sweet. If you want to make it a bit sweeter you can add some chocolate drops and make sugary icing.

Making Pizza More Healthy

pizza with tomatoes and onionsDon’t you just love pizza? I do. deemed unhealthy it’s actually not as bad as it’s reputation. The italian original pizza Margherita is just a very thin crust with tomato sauce and mozzarella. That won’t ruin your diet, however what a lot of us make out of it will. The thick, soft crust, sometimes stuffed with cheese or sausages, more fattening cheese, fattening toppings such as salami or bacon.
You can still make a fairly healthy meal out of pizza if you leave most of that stuff out

Zucchini fritters with 2 min Tzadziki

You can do the whole meal in roughly 6 min and serve as main dish or side dish, whatever you prefer.
There are very sophisticated versions of tzadziki out there, this one is not. It’s a very simple version of it but still tastes better and is healthier than the bought ones.

Quick&Simple One Pot Chicken in Carrot – Worcestersauce

Bean Dip

If you like hot dishes this is amazing. No fat, no sugar just veggies. I guess this wouldn’t really be a zero points dish because canned veggies do have some points, but I honestly don’t see why. Of course you have to be carefull with canned food, but the cans I got contained beans/peppers and salt only. I don’t see whats wrong with that. They are a great alternative if you don’t have a lot of time. I’m also a big fan canned, peeled tomatoes for i.e. tomato soups. It’s just so much faster and I suck at peeling them.

Celery Mash and Parsley Mash

Bean Pancakes

If you’re the kind of person that doesn’t really like to eat a lot of meat, like me,beans and lentils are great because they contain a lot of iron, potassium, zinc and protein. They are also a lot cheaper than meat, so I try to include them in my diet as often as I can and prepare them in various ways.
This kinda is an african dish. Obviously they have herbs and spices over there that are rather hard to get here, so I substituted most of them. You can really flavour them according to your own preferences.

Classic Strawberry Cake

Another one of my fathers favourite cakes, my Mom always used to do this for his birthday. This actually is quite healthy for a cake. There is almost no fat and lots of fruit, if you take whole grain flour it becomes even better. Of course it still contains lots of carbs, but hey it’s a cake.
You don’t have to use strawberries of course, you could also use green apples or kiwis with green jello or bananas and mangos with yellow jello ,just have fun with it

Rosemary Potatoes


That’s how I like to do rosemary potatoes. Super simple to make and always turns out well. It’s not only very healthy but also rather cheap. With less than one 1 € , only a couple of cents for the dried rosemary and less than 1 € for the fresh one, it’s a great low-budget meal. Great Weight Watchers dish too, serve with vegetable and you’ll get a tasty low point, meal.
