Fennel Parsnips in coconut milk with quinoa

I’ve never eaten Parsnips before, and I’m sure this is not how you traditionally prepare them, but I like it. They are so cheap here you can almost not afford not to use them. I got a whole lb for only 0.30€.

Tuna Burger Patties

All natural & Vegan apple pie cookies

Bean Pancakes

If you’re the kind of person that doesn’t really like to eat a lot of meat, like me,beans and lentils are great because they contain a lot of iron, potassium, zinc and protein. They are also a lot cheaper than meat, so I try to include them in my diet as often as I can and prepare them in various ways.
This kinda is an african dish. Obviously they have herbs and spices over there that are rather hard to get here, so I substituted most of them. You can really flavour them according to your own preferences.

Rosemary Potatoes


That’s how I like to do rosemary potatoes. Super simple to make and always turns out well. It’s not only very healthy but also rather cheap. With less than one 1 € , only a couple of cents for the dried rosemary and less than 1 € for the fresh one, it’s a great low-budget meal. Great Weight Watchers dish too, serve with vegetable and you’ll get a tasty low point, meal.

Alaska Backpack Bread

Strawberry – Kiwi Smoothie

Strawberries were on sale this week, so I bought 3 lb of them. I also made delicious Strawberry – Chilli Spring Rolls out of them. The recipe will follow tomorrow.
This is a fairly thin smoothie but still pretty good. With 0 Weight Watchers points it’s also very healthy and contains not too many calories.

Mixing your own Muesli – Summer Muesli and Protein Muesli

I just recently ran over some websites that offer you to mix your own muesli online and they’ll send it to you in less than a week. I certainly liked the idea. Afterall I often bought muesli that I thought was perfect, if only it didn’t contain raisins, bananas or whatever.
So I went online and created my own Muesli at http://www.mymuesli.com but didn’t order because it costs 11,60€ per lb. That’s insane and I thought I can do this way better and way cheaper at home.

Apple Fritters

I just finished my first week working at Burger King and I absolutely hate it. Can’t wait until summer is over. The amounts of waste only this one store produces is insane. And the food is flabby and gross. I believe I’ll never feel the urge to eat fast food again.
So anyways I decided I should make a couple of “healthy fast food recipes” starting with this one. It’s not really fast to prepare but tastes like (good) fast foo while still being quite healthy.

Gorgonzola Dressing

Dressing are often full of fat and so is this one. I didn’t use any oil but the gorgonzola itself is quite fattening.It’s still a lot healthier than the ones you can buy though and doesn’t take too much time to prepare.

Mixed Berry Smoothie

Smoothies are good for really everything. Breakfast, Lunch, Dessert or just in between they’re always great. This recipe is nothing special just a basic berry smoothie, as I always do them.
It’s quite heavy for a smoothie so definitely more suitable as full breakfast or lunch.
For Weight Watchers, my Smoothies had 3 points (1 for yoghurt, 1 for milk and 1 for beetroot juice) and I made 2 servings out of it. If you want to add oatmeal and raisins you will be roughly at 6 points
