This is so amazing. I used stevia instead of sugar to safe some calories, it’s still pretty unhealthy but not too bad. And it’s pie you don’t eat it everyday, so enjoy!

Zucchini fritters with 2 min Tzadziki

You can do the whole meal in roughly 6 min and serve as main dish or side dish, whatever you prefer.
There are very sophisticated versions of tzadziki out there, this one is not. It’s a very simple version of it but still tastes better and is healthier than the bought ones.

Bean Dip

If you like hot dishes this is amazing. No fat, no sugar just veggies. I guess this wouldn’t really be a zero points dish because canned veggies do have some points, but I honestly don’t see why. Of course you have to be carefull with canned food, but the cans I got contained beans/peppers and salt only. I don’t see whats wrong with that. They are a great alternative if you don’t have a lot of time. I’m also a big fan canned, peeled tomatoes for i.e. tomato soups. It’s just so much faster and I suck at peeling them.

Classic Strawberry Cake

Another one of my fathers favourite cakes, my Mom always used to do this for his birthday. This actually is quite healthy for a cake. There is almost no fat and lots of fruit, if you take whole grain flour it becomes even better. Of course it still contains lots of carbs, but hey it’s a cake.
You don’t have to use strawberries of course, you could also use green apples or kiwis with green jello or bananas and mangos with yellow jello ,just have fun with it

Rosemary Potatoes


That’s how I like to do rosemary potatoes. Super simple to make and always turns out well. It’s not only very healthy but also rather cheap. With less than one 1 € , only a couple of cents for the dried rosemary and less than 1 € for the fresh one, it’s a great low-budget meal. Great Weight Watchers dish too, serve with vegetable and you’ll get a tasty low point, meal.

Nordic Berry Muffins

Those are definitely a bit more “edgy” than the average muffin, so give it a try. They are less sweet but the cloves give them a very unique taste and I love it. On top of that they are also vegan and more healthy than the average muffin.
This probably isn’t a Scandinavian recipe, but I thought it tastes kinda nordic, so I put it into that category

Alaska Backpack Bread

The upsides of this bread are that it can be stored fairly long and is very nutritious. It’s a bit sweet but not so sweet that it would be weird to eat cheese of meat on it.And of course that it’s delicious and very fluffy

Pasta Primavera


I’ve done this for a party and it was a great success. This recipe gives a huge portion though, so needless to say if you’re only cooking for a small group, make a smaller potion. It makes a very good party dish though because you don’t need to it serve hot, lukewarm or cold will also do, and you can store it in the fridge overnight.

Strawberry – Chilli Spring Rolls with Lemon Mascarpone dip

I had this for dinner but as I made very small spring rolls, they would have been great as snack or for some kind of Buffet too. I’m not quite sure how many WW points the dough has, but the filling doesn’t have any at all. For a more WW friendly dip simply replace mascarpone with yoghurt or quark.

Strawberry – Kiwi Smoothie

Strawberries were on sale this week, so I bought 3 lb of them. I also made delicious Strawberry – Chilli Spring Rolls out of them. The recipe will follow tomorrow.
This is a fairly thin smoothie but still pretty good. With 0 Weight Watchers points it’s also very healthy and contains not too many calories.

Apple Fritters

I just finished my first week working at Burger King and I absolutely hate it. Can’t wait until summer is over. The amounts of waste only this one store produces is insane. And the food is flabby and gross. I believe I’ll never feel the urge to eat fast food again.
So anyways I decided I should make a couple of “healthy fast food recipes” starting with this one. It’s not really fast to prepare but tastes like (good) fast foo while still being quite healthy.

Ćevapi on greek Salad

I believe Ćevapi is traditional Bulgarian dish, at least it has its origins in the Balkan area, so I will need to make a new category for that. Usually it’s eaten with rice, potatoes or flat bread, but I tried a lighter version here by eating it with salad

Gorgonzola Dressing

Dressing are often full of fat and so is this one. I didn’t use any oil but the gorgonzola itself is quite fattening.It’s still a lot healthier than the ones you can buy though and doesn’t take too much time to prepare.
